Essene Bread with Poached Eggs and Greens

Including plenty of plants has been shown to be especially effective in the prevention of numerous chronic diseases, including diabetes, heart disease and some cancers. Start your day in the same manner as many healthy populations: with lots of vegetables. The seed mix boosts the nutritional profile even further by adding zinc, magnesium and dietary fiber.

METHOD:

  1. Poach the eggs in a large pan of boiling water with 2 tablespoons of white vinegar added. Remove the finished eggs with a slotted spoon.

  2. In another pan, bring a small amount of salted water to a boil and blanch the asparagus stalks. Remove them and refresh under cold running water when they are just tender, about 2 minutes.

  3. Add the spinach to the same pan as the asparagus. When it has just wilted, remove it and drain on a tea towel. Season it with salt and pepper.


TO ASSEMBLE

  1. Cut a 2cm (¾-inch) slice of the Essene bread.

  2. Arrange the dried spinach and asparagus on the bread. Top with the poached eggs.

  3. Sprinkle the essential seed mix over the top of the eggs and vegetables and store the remainder in a closed container.
